Nigerian Coconut Rice is one of my favourite rice dishes to eat. This is a dish that I learnt from one of my friend’s while I was living in a shared accommodation in Australia as an International student. It is cooked with coconut milk and spices. So delicious and pairs well with any grilled meat or vegetables. This is my version of the Spicy Coconut Rice. For my recipe, I have decided to add a variety of peppers. However, if spicy food is not your thing, then you can skip it. But in all honesty, the additional peppers do make this recipe a flavour bomb.

    5 Min
    In a medium-sized saucepan, heat up the oil then add the chopped red onions. Fry the onions until it is soft.
  • 2nd Step

    5 Min
    Add malu miris, bell peppers, curry powder, salt, oregano, Maggi cube, garlic, ginger paste, chilli powder. Stir for about 5 mins until all combined.
  • 3rd Step

    3 Min
    Pour the Maggi Coconut Milk and water, mix until everything is together.
  • 4th Step

    45 Min
    Add the rice and cook for 45 minutes on medium heat.
  • 5th Step

    3 Min
    Serve with your favourite side.

: MAGGI Chicken Seasoning Cube, Malu Miris, Sri Lankan Unroasted Curry Powder, Salt, Chili powder, Ginger, Garlic, oregano, Red Bell pepper, Green bell pepper

Add malu miris, bell peppers, curry powder, salt, oregano, Maggi cube, garlic, ginger paste, chilli powder. Stir for about 5 mins until all combined.

: Water, Maggi Organic Coconut Milk

Pour the Maggi Coconut Milk and water, mix until everything is together.

: Basmati rice

Add the rice and cook for 45 minutes on medium heat.
