The flavours in this Chicken Ambulthiyal are full and well-balanced in spice when it is prepared according to an authentic Sri Lankan tradition. Traditionally it was prepared with fish, but this adaptation gives the classic Ambulthiyal all those characteristic flavours-and what a great twist! Alright, here is how you can make this aromatic and flavorful dish from scratch:

  • Step 1 - Season the Chicken

    Clean the chicken well, draining out the water. Now, dry it and sprinkle salt, pepper, chili flakes, and turmeric powder over it. Keep it aside for some time so that the seasoning gets into the chicken properly.
  • Step 2 - Prepare Spice Paste

    10 Min
    In a blender, combine gambodge, onion, green chilies, ginger, garlic, chili flakes, turmeric powder, the MAGGI Chicken Seasoning Cube, salt, and pepper along with a little water; blend until you achieve a thick smooth paste coating on the chicken.
  • Step 3 - Marinate

    10 Min
    Mix the spice paste with oil and add it to the chicken pieces. Mix well so that each piece gets well coated with the marinade. Let it rest for some time for proper absorption.
  • Step 4 - Cooking Preparation

    2 Min
    Now place a banana leaf at the bottom of the earthen pot so that it doesn't stick and give this whole dish that subtle earthy aroma. Add the marinated chicken pieces to it.
  • Step 5 - Stovetop Cooking

    25 Min
    Let it cook at medium heat; let the spices amalgamate with each other and thicken. Then cover the pot and cook for another 20-25 minutes until your chicken becomes tender and has fully absorbed this sour flavor of gambodge.
  • Step 6 - Oven Alternative

    30 Min
    Alternatively, you can bake the chicken together with the marinade. Place them on a shallow tray and bake in a preheated oven at 200°C until it is well done and caramelized, taking about 30 minutes.
  • Step 7 - To Garnish

    Finally, garnish your Chicken Ambulthiyal with sliced tomatoes, shallots, green chilies, and a touch of lime for that added freshness.
