  • Step 1 - Soak the rice

    10 Min
    Wash the rice well and soak in water for about 10 minutes to achieve even cooking of the grains, so that light and fluffy textures can be retained.
  • Step 2 - Temper the Spices

    5 Min
    Heat ghee in a deep pan over medium heat. Once it's hot, add the cinnamon stick and ginger-garlic paste to it. Sauté until the raw smell goes away and the mixture emits a rich and aromatic smell.
  • Step 3 - Add More Flavor

    3 Min
    Add cardamom, cloves, and curry leaves and mix well to allow the ghee to acquire this fragrance.
  • Step 4 - Toast the Rice

    5 Min
    5 minutes Drain the soaked rice and add it to the pan. Mix carefully so that each grain is coated with the spiced ghee. This gives your rice a nice sheen, and the rice does not stick together.
  • Step 5 – Cook to Perfection

    Add the water, salt, and crumble in the MAGGI Chicken Seasoning Cube into the pan. Mix well and let the rice cook covered till soft and fluffy. The seasoning cube gives a mellow umami flavor, which just balances the richness of the ghee.
  • Step 6 - Rest the Rice

    Once cooked, turn off the heat and let sit for a couple of minutes to firm up the grains without going mushy.
  • Step 7 – To serve, garnish

    5 minutes in a small pan, fry the sliced onions until golden brown, then add the cashew nuts and raisins and fry lightly. Use this mix to garnish the rice and then place a star anise to give it the final bout of aroma.
