    Wash and peel the mangoes. Cut each mango into 4.

    Soak the mangoes in salt water for 8 -10 minutes and drain.

    Heat oil in a pan.

    Temper mustard seeds, pandanus leaf, curry leaves, onions, ginger and garlic.
