Sri Lankan Style Shakshuka – Using Maggi Chicken Cubes

Shakshuka literally means “a mixture” and the traditional version uses tomatoes, onions, and spices
as the base with eggs poached on top.
Shakshuka is an easy breakfast or any time-of-day dish in North Africa and other parts of the Middle
East. My version has a bit spiciness to bring in some Sri Lankan flavour to it.

This dish has been optimized for 2 servings. Quantity and times may need to be varied. Here you can find more information about adjusted portion sizes:
Heat olive oil in a large pan on medium heat. Add the chopped red bell pepper and onion
and cook for 5 minutes or until the onions become soft.

Add garlic, chilli pieces, cumin powder and a Maggi Chicken Cube and cook for a further 1- 2
minutes.

Pour the can of tomatoes into the pan and break down the tomatoes using a large spoon.
Season with salt and pepper and bring the sauce to a simmer.

Using a large spoon to make small wells in the sauce and crack the eggs into each well. Cover
the pan and cook for a further 5-6 minutes or until the eggs are done to your preference.

Garnish with chopped coriander leaves.
