Shakshuka literally means “a mixture” and the traditional version uses tomatoes, onions, and spices as the base with eggs poached on top. Shakshuka is an easy breakfast or any time-of-day dish in North Africa and other parts of the Middle East. My version has a bit spiciness to bring in some Sri Lankan flavour to it.

  • 1st Step

    5 Min
    Heat olive oil in a large pan on medium heat. Add the chopped red bell pepper and onion and cook for 5 minutes or until the onions become soft.
  • 2nd Step

    2 Min
    Add garlic, chilli pieces, cumin powder and a Maggi Chicken Cube and cook for a further 1- 2 minutes.
  • 3rd Step

    4 Min
    Pour the can of tomatoes into the pan and break down the tomatoes using a large spoon. Season with salt and pepper and bring the sauce to a simmer.
  • 4th Step

    6 Min
    Using a large spoon to make small wells in the sauce and crack the eggs into each well. Cover the pan and cook for a further 5-6 minutes or until the eggs are done to your preference.
  • 5th Step

    3 Min
    Garnish with chopped coriander leaves.

: Onion, Red Bell pepper

Heat olive oil in a large pan on medium heat. Add the chopped red bell pepper and onion and cook for 5 minutes or until the onions become soft.

: MAGGI Chicken Seasoning Cube, Garlic, Chilli Flakes

Add garlic, chilli pieces, cumin powder and a Maggi Chicken Cube and cook for a further 1- 2 minutes.

3rd Step of 5

: Pepper, Tomato, Salt

Pour the can of tomatoes into the pan and break down the tomatoes using a large spoon. Season with salt and pepper and bring the sauce to a simmer.

: Eggs

Using a large spoon to make small wells in the sauce and crack the eggs into each well. Cover the pan and cook for a further 5-6 minutes or until the eggs are done to your preference.
