Marinate the chicken with chillie powder, turmeric, Maggi Chicken SeasoningCube,and salt, leave aside for 10 minutes.

For the Herb Mix –Place thegarlic, corianderstem, curry leaves, ginger and green chillies in a mortar and pestle and make a coarse paste without adding any water, keep aside.

In a large pan, heat oil then add chopped onions,fry for 2 minutes, then add the herb mix& fry for a further 2minutes. Add the chicken to the pan and fry for 2minutes, then add water,tamarind waterand tomato to the potand gently cook the chicken in the aromatic broth for 30 minutes.

Spice Mix – In a pan,toast all the spice mix ingredients on a lower heat for 5 minutes or until the spices release the aromas. Then place it in a mortar and pestle, grind the spices to a powdery consistency with some pieces of spices.

Then add the spice mix to the chicken and cook for further 5 minutes.

Add choppedcorianderleaves and enjoy the Naatu Kozhi Rasam with hot steamed rice.
